On a day trip to Paris a few weeks ago, I dropped by the Paris T&P depot. It had recently reopened as a bar at one end and yet another restaurant (called Jaxx at Traxx) at the other end. Burgers were good at the restaurant!
There's a city/county museum in the old Texas Midland freight house adjacent the nicely restored Paris Union Depot. There you can find photos and track layouts of yesteryear's railroads in Paris.
